
"Tsuruokaya" located in Tsuruoka.
It seems that there is a food culture of hormone in Tsuruoka, but the specialty here is hormone ramen. The ramen is topped with hormone, but the point to note is that it is different from the "hormone" you usually eat, known as kotetchan. The hormone here is made from pork muscle and collagen that has been simmered until it becomes tender. Since it is served on ramen, it is definitely delicious.

You can choose the flavor of the soup from soy sauce, salt, or miso. Miso is the most popular.
Bean sprouts and chives are also included, making for a good balance. The chili pepper on the table goes well with it too.


The retro wooden interior allows you to feel the essence of Japan. There are variations such as counter seats, tables, and low tables, and it is quite spacious.
I went on a weekday afternoon, and there was a line mainly of local customers. I waited about 10 minutes before entering.
The ramen was served quickly.
It seems that there are noodles made with local Dadacha beans as well.
