1. Product Overview
The new series Sasaiwai BAMBOOSHOOTS -EPISODE 1- crafted by the long-established sake brewery "Sasaiwai Shuzo" located in Nishikambara, Niigata City, Niigata Prefecture, was officially released in September 2026. With a generational change to a young team, this next-generation sake is designed with the theme of "light yet complex".
2. Origin of the Name
The series name "BAMBOOSHOOTS" symbolizes the strong desire of the young production team, led by the new toji Yusuke Ohno, who inherited the baton from the toji that supported the brewery for many years, to grow straight towards the sky like soft bamboo shoots that have just emerged from the ground.
3. Commitment to Production Method ("Acid Noble White Low")
As a unique approach to express the theme of flavor, the following four elements are incorporated.
- Acid (Acid Base Yeast): A traditional and modern fusion yeast method using lactic acid bacteria cultivated at the Niigata Prefectural Brewing Research Institute to promote lactic acid fermentation and prevent the proliferation of wild bacteria.
- Noble (Classic Method of Noble Sake): By using a portion of sake as brewing water, a rich and profound noble nuance is added.
- White (Use of White Koji): Using white koji, which is used in shochu, to construct a refreshing taste derived from citric acid without any bitterness when chilled.
- Low (Alcohol Content 12% - Genshu): Instead of diluting the alcohol with water, a 12% genshu is achieved by retaining the umami and mouthfeel through technology, pursuing a lightness that does not tire the drinker in modern lifestyles.
