Light Ramen with Dried Sardine Broth

2026/08/13

This time, I will introduce a shop called "NANBUYA ROBATA" located in the suburbs of Morioka City, Iwate Prefecture. It is situated in the Kamiota area, which is surrounded by rural landscapes. I think it is difficult to access by train or bus. To get there, a private car, taxi, or rental car is essential.

This time, I ordered the signature menu item, "Nanbu Hand-Kneaded Ramen"!

Nanbu Hand-Kneaded Ramen can be chosen in soy sauce or salt flavor, but this time I selected the soy sauce flavor.

The soup has a light taste of dried sardine broth, as conveyed in the photo.

The noodles are handmade, made with flour, eggs, sesame oil, and other ingredients. They say the noodles are kneaded by hand to create a smooth texture that pairs well with the soup.

Additionally, the ramen is topped with two slices of chashu, a soft-boiled egg, naruto, bamboo shoots, seaweed, and greens. The chashu has just the right amount of saltiness and is tender and delicious!

Overall, it is a well-balanced bowl, and it is undoubtedly a must-try dish!
