
What I had at Katagamishi's Fujichaya was "Niboshi Soba".
Upon entering the store, it felt more like a calm café than a ramen shop, with a clean and refreshing space. There are counter seats and table seats, making it easy to enter alone, and it seems like a place where you can slowly savor your ramen.


The niboshi soba that was served had an impressive aroma of the broth. Taking a sip, the rich flavor of niboshi was clearly felt, while the unique characteristics of niboshi were not overly pronounced, resulting in a refined taste.

This is a bowl that I hope those who have the image of "niboshi = strong and rich" will definitely try.
As I took a sip of the broth and then slurped the noodles, the flavor of niboshi and the texture of the noodles harmoniously overlapped, making the chopsticks naturally progress. The balance with the ingredients was also good, and I enjoyed it without getting bored until the end.

What left the strongest impression was the careful extraction of the ingredients' flavors.
